Pretty sure this is the first time Hubs and I have ever really celebrated Valentine's Day. I had a friend hanging out with me during the day while hubs was in class. At the end of the afternoon, hubs came home, friend said adieu and I got to work on our V-day dinner. Hubs requested Chicken Casserole. It's something I've been eating since I was a wee little thing. It's one of the first meals I made him so it makes sense that it's what he requested for an evening of sappy romance. To go along with it, I made hubs some lemon-honey glazed carrots (one of the only vegetables he will eat) and roasted some asparagus for me. 


I decided to surprise hubs with dessert. It was adorable watching him try to figure it out. There were a ton of different things I could have picked, but I decided on the one thing we have only had a small handful of times and loved it every single time. Chocolate Molten Lava cake. It was my first attempt at making it so I armed myself with a plethora of youtube videos (this one and this one) and went to work.  I figured out a combo of the two and here's what I ended up with.



Here's what I did:

What you need
50 grams (which means 3-ish tablespoons) of bittersweet chocolate
(I mixed it up and did a one part milk chocolate, one part dark chocolate and one part unsweetened chocolate)
60 grams (or a quarter cup) of butter
2 tablespoons of sugar
1 egg
2 tablespoons of vegetable oil
1 teaspoon of vanilla
1 teaspoon of flour
ramekins of sorts (if you don't have individual ramekins, extra large muffin tins works just as well)

What you do
Pre-heat oven to 425
Butter the baking dishes of your choice and dust each one with some semi-sweet cocoa powder
In a double boiler, melt the butter and chocolate together (or nuke it in the microwave)
Once melted and silky smooth, take it off the heat
In a separate bowl, mix together the egg, sugar, veg oil and vanilla. Beat it into submission with a wisk.
Once smooth and pretty, pour in the melted chocolate and stir together until well combined.
Add in the flour and give it one last stir. 
Equally divide the batter between the baking dishes, put them on a baking sheet and pop them in the oven. 
Bake them for 13 minutes (I could have gone with 11 or 12 minutes and probably got a bit more lava).
Sprinkle with some powdered sugar and if you really want to ruin your calorie count for the day, add a small scoop of ice cream. I went with Haagen Dasz Vanilla Bean Espresso ice cream. 

And that's it. Easy as Molen Lava Cake. 

Oh, and hubs did it right with these babies...
